Pumpkin Squares

Ingredients

1 Cup Vegetable Oil

1 2/3 Cup Brown Sugar

3 eggs

1 15ounce Can of Pumpkin

2 1/2 tsp Pumpkin Spice

2 tsp baking powder

1/2 tsp Salt

1 tsp Baking Soda

2 Cups AP flour ( I like Unbleached)

Buttercream or Coolwhip for topping !


Directions

Step 1. Preheat your oven to 350 degrees Fahrenheit.

Step 2. Cream your oil and sugars together for approx 2 minutes.

Step 3. Add the pumpkin and cream again until totally incorporated.

Step4. Add the eggs one at a time and mix again.

Step 5. Add Salt, Baking Soda, Baking Powder, Pumpkin spice and flour and mix until just combined.

Step 6. Pour into a 10X15 baking pan Bake for 25-30 minutes (until a tooth pick comes out clean)

Step 7. Let the squares cool completely. Now’s the time to top with frosting or a dollop of cool whip ( in the picture I used some left over chocolate butter cream but I prefer cool whip LOL)

Step 8. Cut up and enjoy ! These are so simple perfect for cookie Friday at the office or a fall potluck!

* To store leftovers make sure to cover them and keep them in the fridge, they usually keep well for up to 5 days*
